I Got a Birdie

This was the shot I hit off the tee on a par 3 at Shore Acres.  I took the picture thinking I would say this is the shot I missed for a birdie, but I made it!!

SWEET-AND-SOUR CRUNCHY COLESLAW




This recipe was in the paper about a year ago and we've made it quite often.
The following is the original recipe.
I always substitute Splenda for the sugar and don't use jicama and use white sesame seeds because that's what I have.

SWEET-AND-SOUR CRUNCHY COLESLAW
Makes 10 servings.
2 tablespoons extra-virgin olive oil
1/3 cup white wine vinegar
1/4 cup sugar
1 package (16 ounces) classic coleslaw mix
1/2 cup sliced green onions
1 cup julienned jicama
2 tablespoons slivered almonds, toasted
2 tablespoons black sesame seeds, roasted
Combine olive oil, vinegar and sugar. Whisk until blended; set aside. Combine remaining ingredients in salad bowl. Drizzle dressing over all, toss and serve immediately.

Per serving: 97 calories (46 percent from fat), 5 grams total fat (1 gram saturated), 0 milligrams cholesterol, 11 grams carbohydrates, 2 grams protein, 11 milligrams sodium, 3 grams dietary fiber.

Better Meatloaf

I should have written down the proportions I used when I made the last batch of meatloaf because it was the best ever.  I even liked it and I don't like meatloaf.
I'm thinking this because we had the one I froze for dinner tonight and when I looked to see if I had recorded it, I hadn't so this is what I think it was.
I pretty much tripled the meat and doubled the additions to the Meatloaf from 11/2/2009

Here it is, I'll try it again and alter if necessary.
Ingredients:
      3 lb 90% Lean Ground Beef
      4 large eggs
1 1/2 cups chopped onions
   1/2 cup BBQ Sauce
      3 cups Kikkoman Panko Bread Crumbs
      1  tsp salt
      1  tsp pepper



Directions:
Preheat oven to 350 degrees
Combine all ingredients
Shape into 2 loaves
Put on foil covered pan
Bake 1 hour

Note:  I went back to using 80% beef in 2018.

Note:  I like this meatloaf better with ground turkey than with the beef.  I think I started using the turkey in 2020.  I updated this 11/6/22
