Macaroni and Cheese surprise

Michael was coming for the weekend and we were supposed to go out to dinner tonight but his flight was late and so was John's so we needed a quick and easy meal.
It was tricolor mac & cheese with tuna. Super easy. Cook the macaroni and mix with milk and lots of grated cheese, I used a couple of different kinds of cheddar and some Parmesan. Bake at 350 for 1/2 hour.

Cauliflower Soup

Cook cauliflower
Saute onions and garlic
Blend all

1 head cauliflower
1 large onion
2 cloves garlic
2 Tblsp butter or canola oil
Milk
Grated cheddar cheese
Seasoned salt
Black and Cayenne pepper
Chili powder
Cumin

Cover broken apart cauliflower with water and cook until very tender.
Saute onion and garlic in butter (oil).
Combine all and puree till smooth.
Add seasonings to taste.
Using blender or stick blender, blend cauliflower and onion and garlic

Oatmeal Cookies

When Larry vacuumed today the motor decided to burn up a little and it made the whole house smell. We're burning a scented candle but what better to cover-up the smell of something bad than with something as good as homemade cookies baking.
Since it's a perfect day for baking, snowy and a day you don't want to go out, that's what I am going to do.
Michael is supposed to fly in tonight from Boston at 6:20 but at 2:45 his flight has already been delayed. We'll have to see what happens. If he makes it, he'll have homemade cookies.

Oatmeal Cookies with Raisins and Walnuts (WW points)
1 cup (2 sticks) butter (48)
1 cup firmly packed brown sugar (16.5)
½ cup granulated sugar (8)
2 eggs (4)
1 tsp vanilla (0)
1½ cups all purpose flour (13)
1 tsp baking soda (0)
1 tsp cinnamon (0)
½ tsp salt (0)
3 cups Oatmeal, uncooked (12)
1 cup raisins - (8)
1 cup walnuts - (21.5)

1. Heat oven to 350℉
2. Beat together margarine and sugars until creamy
3. Add eggs and vanilla, beat well.
4. Add combined flour, baking soda, cinnamon and salt; mix well
5. Stir in oats, raisins and walnuts; mix well
6. Drop by rounded tablespoonfuls onto ungreased cookie sheet
7. Bake 10 to 12 minutes or until golden brown
8. Cool 1 minute on cookie sheet; remove to wire rack

Makes 4 doz cookies
2.73 points per cookie

We joined the snowy areas

We woke up this morning and found all the promised snow. We've escaped all the snowstorms that have plagued everywhere else. But at least we're used to it and can handle it.

24 - the TV show

I returned the Day 1, 24 DVDs to the library today and admit that I did look to see if they had the 2nd season. Fortunately they only had the last 3 DVDs of the set. I don't know if I would have taken them out since they are so addicting and we've watched 2 whole seasons in less than 2 weeks.

I'm making good progress at scanning in the second batch of letters from my father to my mother that I'll make into another book. This one will be big because I already have over 200 pages, he wrote really long letters.

I went to visit Mary tonight who's recuperating from knee replacement surgery.

We're on our 2nd 24 marathon. We started with Day 3 but now we're doing them in order starting with 1. We really need to buy these since we can only keep them for a week.

Emily had a baby

Lucas Nigel Shaw was born this morning at 5:27 a.m.;
7 lbs 15 oz, length as yet to be determined.
Mother and baby are doing fine.
Em gets to stay in the hospital til Friday, would prefer to not have visitors there.

Valentines Day

We had corned beef and cabbage for Valentines Day.  It worked out really well, we were going grocery shopping and walked by some corned beef at BJs that looked really good and thought, why not.  We usually go to a St Patricks event at SJFC and have our corned beef there so now we had our own and it was great.  Made it with potatoes, cabbage and carrots (a no-no) for St Patricks day.



Larry got me a new set of irons for Valentines Day but gave them to me the day they were delivered.  He thought for sure I would wonder what the package was and would guess his gift.  Now honestly, the last thing I would think of was that a box that looked like it had a golf club in it was for me.  I'm so used to golf clubs being delivered here that I would have thought it was just ANOTHER golf club for him.  I got a new wood for Christmas, so I can't wait to see how much better my game is.

We went to the library today and got the complete 3rd season of 24.  Larry got into position to watch the first episode.


We started watching at 8 PM and didn't stop until 2 AM.

What retired people do

OK, so I'm retired and I should at least have some fun.  I shouldn't feel like I should be productive at all times.  Of course what I do being productive other people would consider wasting time, since it usually involves doing things on my computer.  I admit it, I'm addicted to my computers.  But there are so many things to do on them and things to learn to do, that I just don't have enough time to do them all.
Anyway, since I do spend so much time on my computer and not enough time with Larry, considering we're both in the same house together much of the day, I suggested that we play on the Wii that we got for Christmas from Larry's kids.  We had so much fun playing Mario-Kart when we visited Kris and her family that it was the perfect gift for us.  We've played Mario-Kart a few times but still seem to gravitate toward 11th and 12th place.  So yesterday we did bowling and golf.  I think I've finally found the sport that I can beat Larry, at least temporarily.  Look at my scores, I'm Red, I rocked.  

I let him have a rematch today, but I beat him again.  Then we tried some tennis and neither of us have the hang of it yet, but I think that one is going to be his.  I should be downstairs practicing that now while he's out playing real tennis, but . . .
